Baked, gooey cheese is the ultimate comfort food. Pairing it with apple slices and fresh
pears makes it a slightly healthier and delicious side dish for a lunch gathering, a movie
night snack or the best part of a potluck meal.
Ingredients
2 tsp cornstarch
2 tbsp milk
½ cup cream cheese, room temperature
1 medium wheel brie cheese (rind removed), cubed
1 cup Gruyère, grated
2 tsp fresh thyme leaves
2 tsp chopped fresh rosemary
2 garlic cloves, thinly sliced
¼ cup MyOlive Herb de Provence Infused Olive Oil
¼ tsp cracked Black Pepper
Preheat oven to 350°F.
In the bottom of a small mixing bowl, whisk together the milk and cornstarch to make a
slurry. Add the cream cheese and mix to combine, creating a loose, creamy mixture. Add
the brie and Gruyère, then mix to combine.
Transfer the cheese mixture to an oven-proof baking dish and spread into an even layer.
Sprinkle with fresh herbs and garlic, drizzle with olive oil, and finish with cracked black
pepper.
Move the skillet to the oven and bake for 15 to 20 minutes, until the cheese is melted and
bubbly.
Turn on the broiler and brown the fondue for 2 to 3 minutes, keeping an eye on the cheese
to ensure it doesn’t brown too much.
Serve hot from the oven with baguette slices, toasts and firm apple and pear slices.
