chalky in the mouthfeel, this EVOO is that classic green Koroneiki profile.
Green banana, fresh-cut grass, culinary herbs, along with a present
bitterness of arugula, endive, kale and mustard greens; the finish is black
peppercorn and hot spice.
Great with both lemon and paprika whisked into a marinade for pork;
ribs or chops, or chicken; the citrus balances the bitterness,
making a fruity forward flavour.
